Old School Mexican Beef tacos
Taco Tuesdays!

Does anyone else gets reminiscent when talking about old school mexican beef tacos? I love prepping this in bulk because you can easily cook a lot of servings and place it in smaller containers, then it freezes just perfectly.

If you are trying to go up your protein game, you can easily use more beef or substitute this with minced turkey. Not a fan of turkey? Chicken, veal or pork will also work very well in this recipe!

Really want to go above and beyond and make this vegan? Source out firm tofu and mash it up by hand so it resembles a coarsely crumbed mince that is perfect to soak up the mexican sauce!

I also added my go to Taco Seasoning specially I really want track the sodium content of my sauce. Most pre packaged taco seasoning has a lot of sodium, you can actually use the taco seasoning from the store, use half and then add a tablespoon of cumin and paprika. Otherwise, don’t fret it is super easy to make and you’ll feel proud of yourself for making it all from scratch!

OLD SCHOOL MEXICAN BEEF TACOS

Ingredients:

1 tbsp olive oil

2 tsp garlic mince

1 white onion diced finely

500 gems minced beef/turkey/chicken/tofu

2 tbsp tomato paste

1/4 cup beef broth/vegetable broth

1 can kidney beans

1 cup mixed vegetables

HOMEMADE TACO SEASONING:

1 tsp  garlic powder, onion powder, dried oregano

2 tsp cumin powder, paprika 1/4 tsp cayenne pepper (this can be skipped if you do not want it to be spicy)

salt and pepper to taste

INSTRUCTIONS

Sauté garlic and onion with the meat. Add your homemade taco seasoning and tomato paste. Simmer with your choice of broth. If you are using beef minced, you could use beef broth. Add in kidney beans and mixed vegetables.

You can serve this with shredded lettuce, fresh tomatoes, cheese and sour cream with tacos, flour tortilla

You could also serve this with some pasta and plain rice!
